This fast, no cook Chimichurri sauce is the perfect condiment for your grilled meats.
- 2 tbs red wine vinegar
- 1 tsp dried oregano
- 1 tsp dried chilli flakes
- 1/3 cup continental parsley leaves, finely chopped
- 2 cloves garlic, crushed
- 1/3 cup extra virgin olive oil

- Combine vinegar, oregano, and chilli in a small bowl. Stand for 5 minutes.
- Add parsley, garlic, and oil. Stir until well combined.
- Season and serve over hot lamb cutlets.
